Oats Pesaruttu with a Carrot Paneer stuffing

Here is the recipe for a colorful, healthy Oats Moong Dal Pesaruttu with a spicy Carrot Paneer Stuffing.

Ingredients for the Pesaruttu:
Oatsa – 1/2 cup
Moong dal – green, 1 cup, soak in water for 4 to 6  hours 
Fresh cilantro – 1/2 bunch
Salt, pepper, cumin seeds and ginger – per your taste 

What to do: 

1. Soak the Moong dal for 4 to 6 hours. 

2. Add oats soaked in water for 10 minutes, fresh cilantro, salt, 1 tsp of pepper powder, 1/ tsp of cumin seeds and 1 tsp of chopped ginger. 

3. Grind to a smooth batter – add very little water. Set aside. 

Tip: the batter should be slightly thicker than your dosa batter – be sure to adjust the amount of water you add. 

Ingredients for the masala:
Mustard seeds, urad dal, curry leaves – temper
Onion – 1, finely chopped
Carrots – 2, grated
Paneer or tofu – 1 cup, drain water, crumbled 
Pepper, turmeric powder, red chili powder, garam masala powder and salt – per your taste 
Cilantro – for taste

What to do: 
1. Heat a pan, add mustard seeds and urad dal. Add curry leaves. Sauté the finely chopped onion until light brown. 
2. Add the grated carrot, salt, turmeric powder, red chilly powder and garam masala powder. Cook until the carrots turn tender. 
3. Finally, add the crushed paneer. Toss. Turn off heat and add finely chopped cilantro.

Now on to the pesaruttu. 
1. Heat a griddle or tawa, pour a ladle of the batter and spread evenly until slightly thin. Add very little oil.

Cook on both sides – until brown along the edges. 

2. Take a table spoon of the stuffing. Spread evenly on one side, fold the sides of the dosa.

Enjoy hot with chutney of your choice. We usually prefer yogurt!
