Mango Chia Blackberry Parfait


Back after another long break to share the recipe for this amaze-sauce Mango Chia Blackberry Parfait.

I almost always get parfait for breakfast when we travel, they are my favorite breakfast on the go (apart from smoothies, of course).

It’s remarkably simple to put together at home and a fantastic way to kick off your day in high spirits. Since I can’t have anything without color crushing on it, I have paired mango and blackberry for this one but you can opt for a simple vanilla parfait and top it with a berry purée as well.

Ingredients:

  • Mango – 1 ripe, chopped
  • Blackberry – 5, frozen
  • Chia seeds – 2 tsps
  • Vanilla – pinch
  • Maple Syrup – 1 tsp or less
  • Dairy-free or low-fat yogurt of your choice – 3/4 cup (I used dairy-free yogurt)
  • Granola – topping, optional

What to do:

  • Purée mango, chia seeds and yogurt along with vanilla.
  • Purée or crush blackberry and maple syrup.
  • Layer both purée in a bowl, top with granola, fruit or chocolate chips  (if you are feeling fancy).
