fresh healthy bagels in the UAE are not very cheap.. but they are a guilty pleasure of mine. I recently saw a few recipes for bagels pop up on my IG feed.
They were ridiculously simple to make, knew I had to try to make them. The texture is very similar to a sourdough bread.. moist and chewy with a very subtle yogurt flavor.
This recipe only uses 5 ingredients, no kneading or proofing or boiling. I wanted to make these vegan but did not have any coconut yogurt to spare.. going to experiment with that next time.
What to do:
Mix together – 1 cup all purpose flour, 2 tsp baking powder, 3/4 tsp salt, 1 cup greek yogurt (do not use buttermilk or regular yogurt). You will have a sticky dough to work with.. dust your hands with flour and knead at least 10 minutes or until the dough is soft.
Pinch out small portions of equal sized dough balls and gently make mini-bagels. Brush few tsps of milk over each of the bagels and seasoning of your choice.
Bake at 210C for 8-10 minutes or until golden brown.
Enjoy toasted, spread your choice of cream cheese!
