If I had to choose between a chocolate cake and pie, I would choose the pie. Blasphemy, I know.. but the heart wants what it wants..
I don’t know if it’s the sweet-salty nature of a pie or the subtle textures that come through in every bite… but I am an apple pie girl any day!
This recipe is vegan, sweetened with brown sugar.. has the most amazing crumbly layer on top. Give it a try and tell me what you think.
What to do:
Mix together 1 cup oat flour, 1/2 cup whole wheat flour, 1/2 cup brown (or use regular) sugar, 1.5 Tbsps baking powder, 1/2tsp baking soda, pinch of salt.
Add 1 cup soy milk (or any plant based milk of your choice), 1/2 cup vegetable oil (I used a mix of coconut oil + olive oil), 1/3 cup apple juice or apple cider. Mix well.
Toss in 1 green apple, chopped small. Beat thoroughly.
For the crumb: 1/2 cup oat flour or whole wheat flour, 1/4 cup brown sugar, 2 to 3 Tbsps of oil, Handful of walnuts. Crush and combine until you have a uniform mixture.
To assemble: pour the cake batter into a greased spring-foam pan, add half of the crumbs over the cake batter, arrange thinly sliced apple over the crumbs, toss in the remaining crumbs around the apple slices. Bake for 40 – 45 minutes at 180C.
Cool completely and slice!
