One of my new favorites during this lock down period. A basic & healthy pasta loaded with green goodness.
What to do:
Blend together – 1 ripe avocado, 3 cloves of garlic, handful of fresh parsley, salt, pinch of nutmeg and 2 tsps of olive oil.
Just toss together with cooked pasta of your choice (don’t even need to use a pan for this recipe). I used gluten free, vegan brown rice pasta.
Note: I also add boiled broccolini, and fresh chili flakes to give it a little bit of a zing.
